Walnut spinach stew is a very nutritious and delicious original Iranian stew that belongs to Damghan, one of the provinces of Iran. Among the amazing properties of walnuts is that walnuts are a rich source of healthy fats such as omega-3s, protein and fiber.
- Mutton: 400 g
- Spinach: 1 kg
- Garlic: 2 cloves
- Onion: 1 pc
- Walnuts: 2/3 cup
- Oil: To the extent necessary
- Salt, pepper, turmeric and cinnamon: To the extent necessary
- Tomato paste: To the extent necessary
- Saffron: To the extent necessary
How to prepare:
To make walnut spinach stew, first clean the spinach and wash it well and let it dry. Then chop to medium size and set aside.
Peel an onion and chop finely or grate it.
Grate the garlic.
Also brew saffron.
Cut the meat and set aside.
Grind the walnuts until well crushed.
Put a medium saucepan on the gas flame. Then pour some oil into it to heat. Now pour the onions into the pot and fry until soft and clear. Add the garlic to the onions and fry. Then add some turmeric to the garlic and onion mixture and fry again until the turmeric is light in color. Next, add the meat to the onion and fry until the meat changes color. Now add the tomato paste and then mix with the meat and onion. Add some water to the ingredients and let the water boil.
First, fry the walnuts in a frying pan until they return to their fat content. Then add the walnuts to the cooked meat and mix a little.
In this first step, fry the spinach in a medium frying pan until light. Then add the spinach to the stew.
At the end of cooking, brew saffron, add salt, pepper and cinnamon to the spinach and walnut stew and adjust the taste of the stew according to your taste. Then let the stew cook for about two hours. Serve with plain saffron rice.
