Tachin meat is another Iranian dish that is mostly prepared at parties. tachin is usually prepared with chicken. But in cook plans , we suggest you prepare tachin with pieces of mutton and enjoy its unique taste. Of course, tachin is also prepared in different cities of Iran by combining different types of vegetables. The method of preparing tachin is different in other cities, but in cook plans we intend to teach you the best method of tachin meat recipe.
- Mutton thigh meat: 500 grams
- Rice: 4 cups
- Yogurt Abstract: 1 glass
- Eggs: 3 pieces
- Onion: 1 piece
- Brewed saffron: half a cup
- Butter: 50 grams
- Liquid oil: half a glass
- Solid oil: 1 tablespoon
- Sliced pistachios, almonds and barberry: as needed
- Salt, pepper, turmeric: as needed
- Water: as needed
Roast the meat with onion and spices a little and add water and give it 2 hours until the meat is completely cooked. After cooking, remove the pieces of meat and take 1 glass of meat juice and set it aside and use it in preparing other soups.
It is better to prepare the rice a few hours in advance and allow the rice to soak well with salt and water, then put it on the heat and add the semi-solid oil until the rice is slightly cooked and the rice water is gone.
Drain the half-cooked rice and in a bowl, pour half of the rice with saffron, yogurt and eggs and prepare the rice for tachin.
Pour the rice you prepared for tachin in the bottom of the desired pot and smooth it with the back of a spoon. Then place the pieces of meat on the rice. Optionally keep meat for decoration. Then pour the white rice over the meat and cook for 1 hour.
After 1 hour, your tachin meat is ready. Serve in the desired dish and decorate with pieces of meat as well as sliced almonds, pistachios and barberry.
