- Eggs (yolks and whites separately): 4 pieces
- sugar: 120 grams
- Vanilla: 1/4 teaspoon
- Wheat flour: (sifted) 120 grams
- Baking powder: 1 teaspoon
- Pastry cream: 600 grams
- Low-fat milk: To the extent necessary
How to prepare
Preheat the oven to 180 degrees Celsius. In a bowl, whisk together the egg yolks, sugar and vanilla until completely creamy.
Pour the egg whites into another bowl and stir with an electric mixer on high speed to form, then add it to the yolk mixture and stir with a whisk.
Take a bowl, then sift and mix the flour and baking powder, add to the yeast and mix thoroughly with the lychee.
Grease the bottom of the 22 cm mold with greaseproof paper, pour the icing into the molds and place in the oven for 30 to 35 minutes to cook.
After the cake is baked, take it out of the oven and let it cool to room temperature. Then take the cake out of the mold and separate the paper.
Cut the cake in half into two equal layers. Pour the pastry cream into a bowl and stir for about 10 minutes with an electric mixer on high speed to form. Then pour it into a pastry funnel with a large star cooler.
Moisten the first layer of the cake with a cooking brush with some milk. Then shape the pastry cream as desired on the first layer and place the second layer of cake on it.
Moisten the top of the cake again with some milk and cream the top of the cake with a pastry funnel. Garnish the cake with slices of summer fruit and refrigerate for 2 hours before serving. Take the cake out of the fridge and cut it.
