Shalkineh or Kazinkeh is one of the special breads of Lorestan, Kurdistan, Kermanshah and Ilam cities, which, like similar breads, are prepared on teak. Teak is a metal plate that is placed on fire and bread is placed on it. They cook. Shalkineh is a bread or sweet that is served for parties and is very nutritious and dietary due to the natural sweetener that is present in Shalkineh. Ingredients :

  1. Date juice: 1 cup
  2. Egg yolk: 5 pieces
  3. Brewed saffron: 2 tablespoons
  4. White flour: 1 cup
  5. Milk: 2 cups
  6. Sugar: 1 tablespoon
  7. Salt: 1/4 teaspoon

Recipes :

First, mix the flour, salt and sugar together in a suitable bowl, and gradually add the milk to the dry ingredients, and mix well so that it does not become lumps, and finally a dough similar to buttermilk is obtained.

Break the eggs in a suitable container and mix a little to get them out of the clot state. Now gradually add the eggs to the ingredients and mix well. Finally, we add saffron.

Now put a suitable frying pan on the heat and grease it with a little oil. Pour some of the dough into the pan and wait until a bubble appears on the dough and one side turns golden, then turn it over so that the other side is cooked as well. In the same way, cook the whole prepared yeast.

Cut the cooked shalkineh into four parts and place it on a plate and serve with butter and date juice.
