Ingredients :

  1. Wheat groats: 2 cups
  2. Eggplant: 2 pieces
  3. Rice: 2 cups
  4. Onion: 1 piece
  5. Tomatoes: 2 pieces
  6. Salt, pepper, turmeric and thyme: as needed

Recipes :

First, sift the wheat semolina so that if there is extra flour in it, it will come out and the size of the wheat will be uniform. Then pour the wheat in a frying pan and start frying with a gentle heat until it changes color slightly. After it cooled down a bit.

Wash and chop the onion, then fry it in a pot with some good oil. Then finely grate the tomatoes and puree the so-called and add a little salt and turmeric. Then add wheat and pour 2 glasses of water on the ingredients, increase the heat until it boils. After boiling, lower the flame and let the wheat cook well and the pot water will run out. If the water runs out while cooking, you can add another glass.

Chop the eggplants to the desired size, then put them in a mixture of water and salt to remove the bitterness, then rinse to wash off the excess salt. Take the eggplant juice and fry it in hot oil and set it aside.

Soak the rice with some salt overnight, then put it on the heat to boil. When the rice is a little soft, drain it and then pour a layer of rice into the pot and a layer of cooked wheat and mix it well with the rice. Repeat until the rice and wheat are done, then let the rice simmer for 50 minutes, and at the end of cooking, pour oil on the rice and serve in a bowl, garnish with hot onions and serve with fried eggplants.
