Ingredients for making dough:
- Yogurt: 1/2 cup
- Baking soda: 1 teaspoon
- Eggs: 2 pieces
- Liquid oil: 3 tablespoons
- Salt: 1/2 teaspoon
- Flour: 2 cups
Ingredients for preparing intermediates:
- Potatoes: 3 pieces
- Onion: 1 piece
- Parsley: 1 tablespoon
- Salt and black and red pepper, turmeric and coriander seeds: To the extent necessary
First, pour the sweet yogurt into the bowl with the baking soda and leave it for 5 minutes until the baking soda is activated and the yogurt swells, then add the eggs, oil and salt and mix, then add the flour that we sifted three times to the ingredients. Add and stir with a wooden spoon until the dough thickens. Use more flour if needed. Bring the dough to the table and knead well for 10 minutes to remove the stickiness of the dough. Put the dough in a bowl and cover it with cellophane or cloth so that the dough does not dry when you make the middle ingredients.
Boil the potatoes and peel them (try not to crush the potatoes too much), then chop the cube and set it aside to cool. Wash and chop the onion and pour some oil into the pan and add the onions. When it is lightly browned and light, add the potatoes with the spices and mix gently and remove from the heat. Add chopped parsley and leave to cool.
Flatten the dough with a rolling pin, cut with a glass or round mold and pour the middle ingredients in the center of the circle and put the other side of the dough on top of each other and shape the side of the dough with a fork. There are two ways to bake, both in the oven and in the frying pan. To fry in oil, pour oil to heat, then fry the dumpling in hot oil and place on a greased napkin to remove excess oil.
