Potato Bourek

bourek is a Turkish dish that is very popular in the world. In addition to its delicious taste due to its mashed potatoes and fried onions, this food also has a very attractive spiral appearance.

Ingredients

  • Olive oil: 2 tablespoons
  • Chopped large onion: 2 pcs
  • Boiled potatoes: 750 grams
  • Red pepper: 2 teaspoons
  • Salt and pepper: Enough
  • Yufka dough 5 or 10 large sheets (depending on thickness)
  • Eggs: 1 piece
  • Yogurt: 4 tablespoons
  • Oil: 3 tablespoons
  • Water: as needed
  • Egg yolk: 2 for the bourek
  • Oil: as needed
  • Spiral bourek

Preparation method:

First, pour the olive oil in a pan and place it on the flame to heat. Roast the chopped onions in a pan until cooked.

Baked potatoes Peel and puree. Then, add the fried onion, red pepper, salt and pepper and stir well.

Turn on the oven to 180 degrees Celsius and let it heat up. Grease the desired round mold with a little oil and set aside. You can use disposable aluminum molds.

Ingredients for softening the dough, ie an egg, yogurt and oil in a small bowl and mix well. Add a little water (lukewarm) to dilute the mixture and easily rub on the dough. About two tablespoons of water is enough.

Place a sheet of dough on the work surface. If the dough is too thin, put two pieces of dough on top of each other. Now with a brush, rub a little of the yogurt mixture on the dough. Do not wet the dough too much, just enough to wet the dough.

Pour a row of potato and onion mixture over the longer edge of the dough. Do this by pouring a few tablespoons of the mixture in a row.

Wrap the dough around the ingredients and roll. If the edges of the dough are left blank, cut those pieces.

Make a spiral with the prepared roll and gently transfer it to the center of the greased mold.

Roll again with the dough and leftovers and place them next to the previous spiral so that the spiral covers the entire container.

Mix two egg yolks well and rub it on the surface of the burqa. Be sure to rub the eggs on the sides of the roll. This causes the rolls to stick together. Then place the mold in the oven for 45 minutes until the surface of the burqa is golden.

Note: The potato burger has the best quality a few minutes after leaving the oven. But you can keep it in a sealed container at room temperature for up to two or three days.
