- Ardeh: 3/4 measure
- Maple syrup or honey: 1/2 cup
- Vanilla essential oil: 1/2 teaspoon
- Almond flour: 2 scoops
- Cinnamon: 1/2 teaspoon
- Cardamom powder: 1/4 teaspoon
- Ginger: 1/4 teaspoon
- Baking powder: 1/2 teaspoon
- Sea salt: 1/2 teaspoon
- Pomegranate seeds: 1/2 cup
Turn on the oven. Set it to 350 degrees Fahrenheit or 180 degrees Celsius to warm it up. Spread greaseproof paper on a large baking tray.
Take a large bowl. Add ardeh, maple syrup and vanilla essential oil. Stir well to form a hand.
Now add the almond flour. Add cinnamon, cardamom, ginger, baking powder and salt to the bowl. Using a spatula or wooden spoon, stir the ingredients until well combined.
Using a spoon or scoop, remove two scoops of pomegranate cookie dough. Put it in the palm of your hand. Then roll it into a ball with your hand. Then place on greaseproof paper in the oven tray.
Repeat for the entire cookie dough. Gently press lightly on the doughs you have formed to flatten.
Sprinkle some pomegranate seeds on the cookies. Press the pomegranate seeds in the cookie dough by hand. Now put the tray in the oven. It takes about 15 to 17 minutes to bake a pomegranate cookie. Once they are light brown, you can take them out of the oven. Let cool for 10 minutes. Then remove them from the greaseproof paper and place them on a cooling plate to cool completely.
