Pokura Bushehri

Bushehri Pokora is a very spicy and delicious snack that makes family parties more attractive. This snack is served with yogurt and mint sauce or sour and sweet sauce. This food is prepared from a combination of vegetables and flour with different spices and is fried in oil. This food has a fluffy and crunchy texture and is very spicy.

Ingredients :

  • Raw pea flour: 1 cup
  • Chopped leeks: 1/2 cup
  • Salt: 1 tsp
  • Chili powder: 1/2 teaspoon
  • Masala gram spice: 1/2 teaspoon
  • Baking powder or baking soda: 1 teaspoon
  • Water: 3/4 cup
  • Oil: To the extent necessary

Preparation method:

Thoroughly mix the flour and all the spices except the baking powder or baking soda. Then add water little by little to get a liquid to the concentration of yogurt.

Then pour the chopped leeks into the liquid and stir thoroughly until smooth. Now you have to leave this dough to rest for about 12 hours at room temperature until it reaches the so-called action and reaches.

After the dough rests, add baking powder or baking soda and mix 5 minutes before frying.

Pour the oil into a small bowl and let it heat well. Try to choose a medium container, because the ingredients must be floating in the oil. When the oil is hot, take it out of the liquid with a ladle and pour it into the hot oil and fry it. Place the fried pakura in a bowl on a napkin to remove the excess oil, then serve with pickles, tomatoes, your favorite sauce and baguette.
