Plum Cake

  • Flour: 1 cup
  • Juicy and sweet black plum, halved: 12 pieces
  • sugar: three-quarters of a cup
  • eggs: 2 pcs
  • Baking powder: 1 teaspoon
  • Salt: The tip of a teaspoon
  • Melted butter: half a cup

On the cake:

  • Fresh lemon juice (optional): 1 teaspoon
  • Cinnamon powder: 1 teaspoon
  • Fine sugar based on the amount of plum sweetness: 1 to 2 tablespoons

How to prepare

Flour, baking powder and salt should be mixed together in a bowl and then sifted.

In a larger bowl, whisk together the butter and sugar with a hand mixer or fine food processor until a smooth dough is formed. Add the eggs and mix again, then add the dry ingredients and stir in the machine until the ingredients are smooth.

Grease the bottom of the cake tin (preferably 20 cm) and pour the ingredients. Place the plums on the cake so that the skin is facing up. Plums should cover all the top.

Soak the plums in fresh lemon juice; It looks like a sack that encloses with a drawstring. Then sprinkle the cinnamon powder in the same way and finally pour the remaining sugar on the ingredients or plums.

The oven should be heated to 177 degrees Celsius. The cake pan stays in the oven for 45 to 50 minutes. Until the cake puffs up and turns golden. We try to bake it in the middle of the cake with a toothpick. When no dough sticks to the wood, the cake is baked to depth.

The cake should cool on a shelf-like object. If the cake stays in a stiff plastic wrap for a day at room temperature or in the refrigerator after cooling, the plum juice will penetrate deeper into the cake.
