In a large bowl, whisk together the egg yolks, pecorino cheese and Parmesan cheese. Add a little salt and pepper.
Pour water into a saucepan to bring to a boil. Put the oil in a large saucepan over low heat. Add the bacon to the oil and fry a little. Before the bacon hardens, take it out of the pot and set it aside.
Add the pasta to the boiling water to soften it. Then drain the pasta and place it in a saucepan over a low flame. Stir for one minute.
Pour the pasta into a bowl and mix it with the cheese and egg mixture. Add pasta again if needed. This food should be served immediately. You can decorate it with a little Pacurino cheese.
