- Porcini mushrooms: 50 g
- Vegetable stock: 1 pc
- Olive oil: 2 tablespoons
- Chopped onion: 1 piece
- Chopped garlic: 2 cloves
- Chopped oyster mushrooms: 250 g
- Risotto rice: 300 grams
- Butter: 25 grams
- Chopped parsley: half a glass
- Grated Parmesan cheese: 50 g
Pour 50 grams of porcini mushrooms in a large bowl and add a liter of boiling water. Let the mushrooms soak in water for 20 minutes. Then drain the mushrooms. Leave a few tablespoons of water in the container.
Add the vegetable stock to the mushroom juice. Then squeeze the mushrooms until the water is completely removed.
Heat 2 tablespoons olive oil in a frying pan over medium heat. Add chopped onion and garlic to oil and cook for 5 minutes.
Chop 250 grams of oyster mushrooms and porcini mushrooms. Then add salt and pepper and cook for 8 minutes to soften the mushrooms.
Pour the rice into the pan and cook for one minute. Then add the vegetable stock to the rice and let mix well. Place the pans on a medium flame and stir in the rice to absorb the liquid. Stir until the rice has a creamy texture.
After cooking the rice, add 25 grams of butter and 25 grams of Parmesan cheese with chopped parsley. Stir a little and then pour the remaining 25 grams of cheese and parsley into the rice.
