- Medium eggplant with skin: 6 pieces
- Chopped or grated garlic: 5 cloves
- Medium chopped tomatoes: 2 to 3
- Eggs: 2 to 3
- Oil: one-third of a measure
- Turmeric: 1 teaspoon
- Salt and pepper: as needed
- Fresh parsley or mint leaves to decorate
Rinse the eggplants well with cold water.
Grill the eggplants on charcoal or gas or in the oven until the skin is half-burnt and the eggplants are soft. Then wait a few minutes for the eggplants to cool. Peel eggplant , grate it and squeeze the juice.
In a saucepan, fry the prepared garlic with turmeric powder on a low gas flame until slightly golden. Then add the eggplants and mix together.
Add the prepared tomatoes, salt and pepper and mix. Put it in the pot and then put the ingredients on a gentle gas flame for 15 minutes to cook. Stir every few minutes.
When Mirza Ghasemi was no longer watery, you can add eggs to it. Break the eggs in a bowl. Add salt and pepper and stir.
