But if you are looking for a diet salad, I recommend this lentil salad. This is a vegan salad, meaning that no animal products are used in it. In addition to lentils, you need cooked carrots, celery stalks, bell peppers, onions, parsley and fresh lemon juice. It is also great for pre-preparation and can be stored for a long time.
- Raw lentils: 1 cup
- Bo leaves: 1 pc
- Thyme: 2 branches
- Cooked carrots: 1 cup
- Chopped red bell pepper: 1/4 cup
- Crushed celery: 1/3 cup
- Chopped red onion: 1/4 cup
- Chopped parsley: 1/4 cup
- Garlic: 1 clove
- Fresh lemon juice: 5 tablespoons
- Olive oil: 1 tbsp
- Salt: 1 tsp
- Pepper: To the extent necessary
How to prepare:
Pour the lentils with two thyme sprigs and a Bo leaves into a small saucepan. Add enough water to cover two or three inches of the lentils. Let the water boil. Then lower the flame and wait for about 20 minutes. Lentils should be softened.
Then drain it. Remove the fragrant and thyme leaves from the dish and discard.
Cook the carrots and chop finely. Finely chop the celery stalk, red bell pepper and red onion. Pour all into a large bowl.
