Lemon and chicken diet soup is one of the necessary foods and diet that helps your health a lot and makes you able to maintain your fitness.
- Chopped chicken: 400 g
- Chopped carrots: 3 medium
- Chopped leeks: 1 large
- Low salt chicken broth: 10 cups
- Rice: 2/3 cup
- Extra olive oil: one tablespoon
- Chopped garlic: 5 cloves
- Fresh lemon juice (from two large lemons): one-half cup
- Large eggs: 2 pcs
- Freshly chopped dill: a tablespoon
- spinach: 4 cups
- Salt: 2 tea spoon
- Black pepper for serving time: To the extent necessary
How to prepare:
Heat the oil in a large saucepan over medium heat. Add garlic, carrots and leeks to the pot.
Cook for 10 minutes and stir constantly until the vegetables are soft and fragrant.
Add the chicken stock to the vegetables and increase the temperature to medium-high. Bring the chicken broth to a boil.
Add the rice and reduce the heat to medium-low.
Allow to cook for 20 minutes or until the rice is cooked through, stirring occasionally.
In a medium bowl, whisk together the lemons and eggs.
Slowly pour a cup of hot chicken juice into the lemon and egg mixture, stir well and then empty the bowl into the pot. Add dill, spinach, chicken and salt.
Leave on the flame for 10 minutes to soften the spinach and reheat the soup.
If you like, pour in the black pepper soup and then serve.
