Kofteh Tabrizi

ingredients :
- Minced Meat : Cattle thighs 750 g
- Chicken thighs without bones: 100 g
- Cooked and minced cotyledons: 300 g
- Chopped vegetables kofteh: 500 g
- Baked and minced potatoes: 1 pc
- Wet rice: 1 cup rice cooker
- Melted saffron: 1 tbsp
- Chickpea flour: 1 tbsp
- Raw eggs: 1 pc
- Large onions: 1 pc
- Preparation: 60 minutes
- Baking time: 90 minutes
- Total cooking time: 150 minutes
Tabriz kofteh sauce ingredients:
- Sour grape : Half a cup
- Cumin : 1 tbsp
- Tomato paste: 1 tbsp
- Salt, pepper and turmeric: To the extent necessary
- Melted saffron: 1 tbsp
- Tomatoes: 4 pcs
- Large onions: 1 pc
- Scented leaves: 2 pcs
How to prepare:
Finely chop the tomatoes and put them on the heat with a little hot onion until the tomatoes are soft. Add a tablespoon of tomato paste, salt and pepper and a tablespoon of melted saffron and pour the spices on it. Add the butter and add a liter of hot water and bring to a boil.
The meat and chicken should be minced once, and if it is poured once in the food processor, it is very good and suitable because the meat will have texture. Finely chopĀ the onion and take the water and mix the pulp with the meat.
Add the Cooked and minced cotyledons and the cooked minced potatoes and add the salt, pepper, saffron and cumin and knead by hand.
Add a raw egg and a tablespoon of chickpea flour and knead with your hands until it is completely sticky.
Chopped vegetables kofteh Tabrizi (dill 100 g | leeks 200 g | savoury 100 g | tarragon 50 g | basil 50 g) and add the water by hand and knead again. Boil the rice and add it to the above ingredients.
If the ingredients are loose, we add chickpea flour to it. Beat the meat mixture several times on the bottom of the pan until it is completely sticky.
Place a clean cloth or a clean piece of thin cotton in a bowl and place the prepared meat in the bowl.
Mix the paste, hot onion, saffron, soaked walnuts and plums, salt and pepper all together. Dig a hole in the middle of the meat and put the boiled egg and other ingredients in the middle of the meat and take both sides of the cleaning and gather the meat all around. Wet your hands with warm water and round the meatballs completely and seal it.
Tie the cleaning and put it in the pressure cooker where the sauce is boiling. We also added two scented leaves, which we take out at the end. It takes about an hour for the kofteh to cook during the cooking process.
When it is cooked, remove the cleaning from the kofteh and put it back in the pressure cooker.
Reduce heat to simmer. After cooking, our food is ready to serve.
