- Mohamara sauce: half a cup
- Meat (beef or lamb. Minced. Not too greasy.): 450 g
- Spices: 1 teaspoon
- Cinnamon: 1 teaspoon

Put onion and parsley in a food processor bowl and chop as much as possible. Add the meat and spices and mix for 1 minute or until the meat, onion and parsley are well combined. Add the mohamara sauce and mix to combine the ingredients.
Take a small cup of the meat mixture and shape it into a sausage on a skewer. You can wrap foil around it instead of skewers. Place in the oven at 400 degrees Fahrenheit (204 ° C) for 10 minutes. Turn the skewers or meat sausages over until they are cooked. Serve the kebab with pita bread and salad.
Lebanese Mohamura sauce
- Capsicum: 3 (240 g puree) (red)
- Garlic: 4 cloves
- Walnuts: 50 grams
- Cumin (ground): 3/4 teaspoon
- Pomegranate paste: 1 and a half tablespoons
- Onions: 1 small
- Red pepper (or alpine or roasted paprika): 1 tsp
- Salt: 1 teaspoon
- Olive oil: 1/4 cup (completely pure)
Put the walnuts in a bowl, pour water over it and let it soak for 1 hour.
Garlic, grate it and put it in a mortar with salt. Beat the garlic and mash it.
Wash the peppers and place them on a baking tray lined with foil and place on the grill under the grill flame. Turn them every few minutes until their skin is black and charred. At this stage, put the peppers in a plastic bag with a few spoons of water. Tighten the bag and leave it for 10 minutes. Open the bag and peel the peppers. Cut the peppers in half and separate the seeds, stems and whites inside.
Peel an onion and cut it into 4 parts.
Put pepper, onion, crushed garlic, dried walnuts, cumin, pomegranate paste, red or paprika puree and olive oil in a food processor. Stir for 1 minute or until the mixture is smooth and thick. Taste to taste and pour the sauce into a bowl. Let it serve and then store in the refrigerator.
