Italian potato salad is a very tasty Italian appetizer. This delicious food is easily prepared. Potato is the main ingredient of this food, which has a lot of starch. It is better to use small potatoes in preparing this food. If you use large potatoes, you have to chop the potatoes to cook them. Of course, if you chop the potatoes and boil them in water, they will cook much sooner, but it will cause the potatoes to be crushed, and this is not good for the appearance of your food at all. Be sure to first boil the water in a saucepan and after boiling the water, boil the potatoes for 8 to 12 minutes. After cooking the potatoes, you should give them time to cool. After they cool, you have to cut the potatoes into 5 cm pieces. Make sure the potatoes are fully cooked. All the ingredients in this food are good for your health, and if you have high blood fats, you can not add mayonnaise. This food must be served cold. Therefore, after preparing the salad, you must put it in the refrigerator for 20 minutes and then serve it. If you want your salad to taste spicy, you can increase the amount of pepper according to your taste. After adding the chopped parsley and dried tomatoes, you should mix them well with the potatoes. Ingredients :

  1. Large halved or finely potatoes: 450 g
  2. Plain yogurt: 4 tbsp
  3. Mayonnaise: 4 tablespoons
  4. Sun-dried tomatoes: 8 pcs
  5. Chopped parsley leaves: 2 tbsp
  6. Salt: As needed
  7. Pepper: As needed

Boil water in a saucepan.

Cook the potatoes in boiling water for 8 to 12 minutes.

Cut dried tomatoes into thin slices.

Mix yogurt and mayonnaise in a bowl.

Add salt and pepper.

Add the chopped tomatoes and parsley to the ingredients and mix them together.

Boil the potatoes in boiling water and chop them into 5 cm pieces after cooling.

Pour the salad dressing over the potatoes to completely cover their surface.

Refrigerate the salad for 20 minutes.
