- Egg whites: 2 pcs
- Lemon juice: 1 pc
- Almond flour: 2 and 1/4 cup
- Powdered sugar: 1 and 3/4 cup

- Almond extract: 1 tbsp
- Vanilla extract: 1 tbsp
First, pour the egg whites with the lemon juice into a bowl and beat with an electric mixer until it is firm and hollow and retains its shape. The egg whites should be beaten so that they stick to the stirrer blades and also the traces of the blades remain on the surface of the beaten egg whites.
Sift almond flour, powdered sugar, salt and baking powder into a fine sieve and add to the beaten egg whites little by little. Do this in several steps and do not add the ingredients to the egg white all at once. Stir all ingredients in a circular motion using a wooden spoon or ladle to combine.
Add the orange juice, vanilla extract and almond extract to the other ingredients and stir with a fork or ladle until well combined. Now you will have a dough with a soft and delicate texture.
Cover the oven tray with greaseproof paper and grease the surface with a brush using a little oil.
Wash your hands. With a clean hand, roll out the dough to the size of large walnuts and roll them in the palm of your hand. Pour some powdered sugar into the bowl. Then roll the dough balls into powdered sugar to cover the entire surface and the dough balls will turn white. Give the dough a little oval shape by hand. Then place them on the oven tray at intervals. Smooth each dough slightly with your fingers.
Place the tray at room temperature for about 1 hour and let the dough rest until it is completely dry and there are small cracks on them. Glue the cracks together with your fingers as much as possible.
Preheat the oven to 300 ° F (150 ° C) while the dough is resting and drying. Then place the oven tray in the preheated oven to bake the cookies for 20 minutes and they are ready.
After the sweets are cooked, take them out of the oven and place them on the refrigerator to cool completely. Then serve it with coffee and tea.
