Green Squash Pasta

green squash is one of the most nutritious vegetables that we are always looking for new ways to use in our diet. Stringing green squash is one of these ways. How to make this green squash pasta is very easy. The squash is roasted and cooked with tomatoes, basil and Parmesan cheese and a significant amount of garlic. Vegetable juice is also used to make delicious sauces that give your healthy and attractive food more flavor.

ingredients :

  • Medium green squash: 4 number
  • Olive oil: 3 tbsp
  • Garlic crushed: 1 tbsp
  • Red pepper: 1/4 teaspoon
  • Medium tomato: 2 number
  • Parmesan cheese: 1/2 cup + some for serving
  • Basil leaves: chopped 1 cup
  • Corn starch: 1 tsp
  • Cold water: 2 teaspoons
  • Salt and pepper: To the extent necessary

How to prepare:

First of all, wash the squash and cut off their heads. Then thread them using a string machine or a special grater. If you don’t have any of them, you can first cut the squash into thin sheets using a regular peeler and then cut them into long strands with a knife. The longer the strands, the more the zucchini pasta will look like regular pasta.

Pour the olive oil with the grated garlic and red pepper powder into the pan and place on a medium flame to heat. When the oil is completely hot, add the zucchini noodles. Roast the green squash for about 5-7 minutes until cooked through but still slightly crispy. Do not overcook them, otherwise the pasta will become doughy. While frying, turn the green squash upside down so that they all have a chance to cook and touch the bottom of the pan.

Chop the tomatoes and basil and add them to the pan with the grated Parmesan cheese. Continue to fry the pasta and the rest of the ingredients for another 1 minute. Now take the green squash and vegetables pasta and transfer it to the serving dish you want. Leave the liquid in the pan. We will use it to make pasta sauce.

Heat the remaining liquid in the pan until it is well heated but does not boil. Dissolve cornstarch in a little cold water and then pour over the vegetable juice in the pan. Heat for about 1 minute and stir until the sauce thickens. Taste it and add salt and pepper to taste. Pour the sauce over the zucchini pasta. Sprinkle some Parmesan cheese and basil leaves on it and serve the pasta.
