- Large eggplant: 1 pc
- Coarse grain salt: 1 tbsp
- Chopped garlic: 3 cloves
- Italian spices: 1 tsp
- Grated mozzarella cheese: 1 cup
To make pizza sauce:
- Oil: 1 tbsp
- Chopped garlic: 1 large clove
- Peeled tomatoes: 350 g
- Salt: 1 tsp
- Chopped basil and parsley: 2 tbsp
- Tomato paste: 1 tbsp
How to prepare:
First of all, you need to make a pizza sauce. Heat a tablespoon of oil in a pan over medium heat. Fry the garlic a little until it starts to change color and turns a little brown. Now put the garlic aside in a bowl and put the chopped tomatoes in the pan.
Put the lid on the pan for a while so that the tomatoes are a little soft and turn them upside down from time to time. After about 15 minutes when the tomatoes are completely soft, add the hot garlic, salt, basil and parsley and a tablespoon of tomato paste and mix. Continue frying for another 5 minutes until your sauce is even. If the sauce thickens too much at any stage of the process, add a little warm water. Your sauce is ready after cooling. You should have about 1 cup of pizza sauce.
Peel an eggplants with a knife, slice it into slices a little thicker than half an inch. Sprinkle coarse salt on the eggplant rings and place them on a clean towel for 10 minutes. After this time, wash the eggplants and dry them with a kitchen towel.
Preheat the oven to 200. C. In a small bowl, mix the crushed garlic cloves, olive oil and Italian spices and rub the liquid on both sides of the eggplant rings using a brush. Now place the eggplants on a greased baking tray and place in the oven for 15 minutes.
