- Carrots: 900 g
- scallion : 6 chopped
- Garlic: 3 pcs chopped
- Fresh ginger: 2 tablespoons chopped
- curry powder: a teaspoon
- Chicken juice: two and a half cups of low-salt
- Cream: Half cup
- Salt: To the extent necessary
- Plain yogurt: optional
- Fresh and chopped coriander: optional
- Shrimp: 220 grams peeled, cooked and chopped
How to prepare:
Combine carrots, onions, garlic, ginger, curry powder, chicken broth and two cups of water in a bowl. Put the lid on the pot and cook on low heat for 7 to 8 hours until the carrots are soft. Then remove the soup from the heat and allow to cool slowly.
Puree the soup in a blender and then return it to the pot. Add the cream to the soup, add salt, put the lid on the pot and cook again until warm, about 15 minutes.
Pour the hot soup into the bowls with a ladle and pour yogurt and coriander on it. Put the shrimp on the soup and serve.
