Borek Vegetables

One of the types of Borek is vegetable burqa, which is the basis of this Turkish dish, yufka dough.

Vegetable burgers are very popular among vegetarians and are served in restaurants as an appetizer or main course.

This dish can be served with a variety of sauces.

Ingredients for four people:

  • Yufka Dough: A rectangular package
  • Chopped squash : 1 cup
  • Chopped eggplant : 1 cup
  • chopped carrots: half a cup
  • chopped mushrooms: 1 cup
  • chopped bell pepper: half a cup
  • Freshly grated ginger: 1 teaspoon
  • Freshly grated garlic: 1 teaspoon
  • Mozzarella cheese or pizza cheese: as desired
  • Butter or oil: as desired
  • Vegetable burqa spices (salt, pepper, thyme, turmeric): as desired
  • Baked saffron: a tablespoon
  • Sesame or black seed: some to decorate
  • Egg yolk: 1 number
  • Egg whites: 1 number
  • Flour: 1 tablespoon
  • Milk : a quarter of a cup

How to prepare vegetable burqa:

Fry the garlic in oil in a pan.

Put the squash, eggplant, mushrooms, carrots, bell peppers and ginger in a pan to cook.

Add the spices and salt as desired and let them cook completely, then set aside to cool.

Remove the Yufka dough two hours before preparing the freezer burger and let it soften at room temperature.

Stir in the milk, egg whites, butter and flour and spread a layer of Yufka dough. Apply the mixture of milk and eggs with a pen to soften it.

Spread another layer of yufka on it and rub it again with a pen of liquid, put some cooled cooked vegetables in the middle of the edge of the dough and pour your favorite cheese on the vegetables.

Turn both sides of the edge of the yufka inwards, so that the ingredients do not spill out, and roll the yufka until the end of it is soaked in milk liquid and egg white so that the Borek dough sticks.

Grease all the burgers you have made, grease the oven tray and spread greaseproof paper on it.

Arrange the Borek regularly. On a tray, stir in the egg yolks and saffron and dip the Borek with a pen and sprinkle with sesame or black seed.

Place the tray in the oven for 30 minutes at one hundred and eighty degrees until golden and toasted.

Finally, place them in a serving dish and serve with your favorite sauce and garnish.
