Ingredients :
- Yufka dough: 1 pack
- Water: 2/3 cup
- Sugar: 1 cup
- Concentrated brewed saffron: 2 tablespoons
- Rose: 1/3 measure
- Cardamom: 1 teaspoon
- Lemon essence: 1/2 teaspoon
- Butter: 50 grams
Intermediates:
- Powdered sugar: 150 grams
- Almonds: 300 grams
- Cardamom: 1 teaspoon
Preparation method:
Pour the sugar and water into a saucepan and put it on the heat without stirring until the sugar grains melt. After 10 minutes, add rose, saffron and cardamom and wait for a while, then add lemon essence syrup in the last 5 minutes of cooking. Let it boil for a while, then remove from the heat.
To get almond skin, the best way is to put a pot of water on the heat to boil, then remove from the heat and put the almonds in boiling water for 1 hour, then after this time, easily peel the skin with a simple pressure. Remove and place on a clean cloth to dry. After drying, pour it into the grinder or food processor with powdered sugar and cardamom powder and mix well to powder.
Choose a suitable dish for baking baklava and lightly grease the bottom of the dish with melted butter, then open the dough and put it in three layers on top of each other (only for the bottom layer) and cover the layer with a little butter or rose spray. Moisten then pour the middle ingredients on the dough and repeat the layers in the same way until the ingredients are finished. Put the last layer in three layers and wipe the layer with butter and rose.
After we put the layers, cut the baklava into a rhombus, then put it in a preheated oven for 20 minutes at 180 degrees until it is cooked. At the end of baking, turn on the oven so that the surface of the baklava is also grilled.
When you take the baklava out of the oven, wait for 5 minutes, then pour the cold syrup on the hot baklava to absorb the baklava syrup, then decorate it with a little pistachio powder at the end.
