Baked potatoes with mushroom sauce

Grilled potatoes with mushroom sauce is one of the delicious diet foods suitable for people who want to go on a diet.


  • Potatoes: 2 large
  • Salt: To the extent necessary
  • Freshly chopped basil: a handful
  • Olive oil: 1 tbsp

Preparation of mushroom sauce:

  • Mushrooms: 200 g
  • Olive oil: 1 tbsp
  • Asparagus: 6 pcs
  • Vegetable extract: 100 ml
  • Salt and pepper: To the extent necessary
  • Soy milk: 4 tbsp
  • Fresh rosemary: 1 teaspoon

How to prepare :

Preheat the oven to 400 degrees Fahrenheit.

Wash the potatoes but do not peel them and sprinkle a little salt on them when they are still wet. Put in the oven for an hour to crisp and cook.

Now we make the mushroom sauce.

Chop the asparagus, pour a tablespoon of olive oil and mushrooms and a pinch of salt into the pan and cook for 5-6 minutes until the mushrooms and asparagus are soft and the water is dry.

Add the vegetable extract and continue cooking until the extract is reduced, then add the soy milk and rosemary. Taste and add salt and pepper if needed.

When the potatoes are ready, let them cool. Then cut them in half carefully and take out most of the cooked potatoes. But be careful not to scratch the skin of your baked potatoes.

Pour the cooked potatoes with salt and basil into a bowl and mash. Pour the ingredients into the skin of the potatoes, which is like a bowl, sprinkle a little olive oil on it and put it in the oven for 5 minutes until golden.
